Our hog roast process starts with possibly the most important step - sourcing great quality pork.
All of our hog roast pigs come from Carter St. Butchers in Fordham, Cambridgeshire, who source all of our free range pigs from over the Suffolk border.
One of the great things about free range pork is that it needs no disguise - all we do is add a little salt during the cooking process.
The hogs are scored thoroughly, allowing the fat to baste the pork as it slowly heats and rotates, which results in fabulous meat with plenty of moisture and GREAT crackling !
